    The composition and distribution of fatty acids in triacylglycerol (TAG) molecules are commonly considered as factors that determine the physical properties of a given oil or fat. The distribution of any fatty acid in fats and oils can be described through the α coefficient of asymmetry, which can be calculated from the TAG composition and fatty acid composition of the sn-2 position of the TAGs determined through lipase hydrolysis. High-oleic high-stearic oils and fats are considered stable and healthy, and they are good substitutes for hydrogenated vegetable oils and palm fractions in many food products, such as spreads and confectionery. Here, different high-oleic high-stearic acid oils were formulated which contained different distributions of saturated fatty acids in their TAGs, while maintaining a similar fatty acid composition. The aim of this work was to discuss the possibility of using the α coefficient to predict the physical properties of fats in function of their chemical composition and their melting and crystallization behavior as examined by differential scanning calorimetry.La composición y distribución de los ácidos grasos en las moléculas de triglicéridos se consideran factores determinantes en las propiedades físicas de los aceites y grasas. La distribución de ácidos grasos en un determinado aceite o grasa puede caracterizarse mediante un coeficiente de asimetría α, calculado a partir de las composiciones de triglicéridos y de ácidos grasos en la posición sn-2 de la molécula de triglicérido mediante hidrólisis con lipasa. El aceite de girasol alto oleico-alto esteárico es una grasa estable y saludable, adecuada para reemplazar a los aceites vegetales hidrogenados y fracciones de palma en muchos productos alimentarios, como grasas plásticas y grasas de confitería. En el presente trabajo, se formularon diferentes aceites alto oleico-alto esteárico con diferente distribución de los ácidos grasos saturados en sus triglicéridos, aunque manteniendo una composición similar de ácidos grasos. Los perfiles de fusión y cristalización de estas grasas se estudiaron mediante calorimetría diferencial de barrido. El principal objetivo de este trabajo fue analizar la posibilidad de usar el coeficiente α para estimar las propiedades físicas de las grasas a partir de estos resultados

    Oxidation by the action of ozone takes place at high rates and involves the reaction of ozone molecules with fatty acid double bonds followed by the formation of stable oxidation products with biological activity. In the present work, a comparative study on sunflower oil oxidized by ultraviolet (UV) light and ozone was carried out. This study involved the chemical characterization of sunflower oil oxidized by UV irradiation and ozonation, in addition to assessing the germicidal activity of oxidized oils obtained under various conditions. The results indicated that under the conditions studied, the increase in the dose of UV irradiation did not produce significant changes in the level of oxidation of the oil. Ozonation promoted the formation of oxygenated compounds at higher rates, increasing in concentration as the applied dosage of ozone increased. The germicidal activity of the oils behaved similarly, with considerably higher activity found in the ozonized oils.La oxidación por acción del ozono tiene lugar a tasas muy altas e implica la reacción de las moléculas de ozono con los dobles enlaces de los ácidos grasos, seguida de la formación de productos de oxidación estables con actividad biológica. En el presente trabajo se realizó un estudio comparativo del aceite de girasol oxidado por luz UV y por ozono. Este estudio consistió en la caracterización química del aceite de girasol oxidado por irradiación UV y por ozonización. En segundo lugar, se evaluó la influencia en la actividad germicida potencial del producto final obtenido en varias condiciones de ozonización. Los resultados indicaron que, en las condiciones estudiadas, el aumento de la dosis de irradiación UV no produjo cambios significativos en el nivel de oxidación del aceite. La ozonización promovió la formación de compuestos oxigenados en mayor proporción, aumentando su concentración a medida que aumentaba la dosis de ozono aplicada. La actividad germicida de los aceites se comportó de forma similar, encontrándose una actividad considerablemente mayor en los aceites ozonizados

    A comparative study was conducted to determine the fatty acids, triacylglycerol compositions and thermal properties of Tunisian kernel oils from the Prunus persica varieties, peach and nectarine, grown in two areas of Tunisia, Gabes and Morneg. Qualitatively, the fatty acids composition and triacylglycerol species were identical for all samples. Oleic acid (67.7-75.0%) was the main fatty acid, followed by linoleic (15.7-22.1%) and palmitic (5.6-6.3%) acids. The major triacylglycerol species were triolein, OOO (38.4-50.5%), followed by OOL (18.2-23.2%), POO (8.3-9.7%) and OLL (6.3-10.1%). The thermal profiles were highly influenced by the high content of triolein due to the importance of oleic acid in these oils. Moreover, the fatty acids distribution in TAG external positions was determined as corresponding to an α asymmetry coefficient that was between 0.10 and 0.12, indicating a high asymmetry in the distribution of saturated fatty acids in the position sn-1 and sn-3 in the TAG species of all samples.Se ha realizado un estudio comparativo de aceites tunecinos obtenidos a partir de las semillas de variedades de Prunus persica, melocotón y nectarina, cultivadas en dos zonas de Túnez, Gabes y Morneg. Cualitativamente, la composición de ácidos grasos y de especies de triglicéridos fueron idénticas para todas las muestras. El ácido oleico (67,7-75,0%) fue el ácido graso principal, seguido del linoleico (15,7-22,1%) y el palmítico (5,6-6,3%). Las especies principales de triacilglicéridos fueron la trioleina, OOO (38,4-50,5%), seguida de OOL (18,2-23,2%), POO (8,3-9,7%) y OLL (6,3-10,1%). Los perfiles térmicos fueron muy influidos por el alto contenido de trioleina debido a la importancia del ácido oleico en estos aceites. Por otra parte, se determinó la distribución de ácidos grasos en las posiciones externas de los TAG correspondiendo a un coeficiente de asimetría α entre 0,10 y 0,12, lo que indica una alta asimetría en la distribución de los ácidos grasos saturados en la posición sn-1 y sn-3 en las especies de los TAG de todas las muestras

    Within the chemical transformations that vegetable oils undergo, oxidative reactions are one of the most widely studied. During the process of oxidation oils react with oxygen in their different forms to produce a large variety of chemical species that alter their chemical and physical properties. This work is the second of a series of two in which the action of ozone on different sunflower oils was investigated. Ozone reacts with double bonds of unsaturated fatty acids which produce different peroxidated species. The presence of altered triacylglycerol (TAG) increases the polarity of the vegetable oils and induces changes in their physical properties. Moreover, peroxygenation alters the aggregation of TAGs, favoring the formation of dimers or oligomers that can substantially change the melting and crystallization profiles of these oils. In the present work the effect of ozonation on four different sunflower oils was studied: common sunflower, high oleic sunflower and two highly saturated sunflower oils, high palmitic and stearic in a high oleic background. Furthermore, the species of TAGs from the different oils that were affected by the ozone oxidative attack were studied. The formation of polar compounds and TAG aggregates were investigated as well as the effect caused by them on the physical properties of the oils as studied through differential scanning calorimetry.Dentro de las transformaciones químicas que experimentan los aceites vegetales, las reacciones oxidativas son de las más ampliamente estudiadas. Durante el proceso de oxidación los aceites reaccionan con el oxígeno en sus distintas formas para producir una amplia variedad de especies químicas que alteran sus propiedades físico-químicas. Este trabajo es el segundo de una serie de dos en los cuales se investigó la acción del ozono sobre diferentes aceites de girasol. El ozono reacciona con los dobles enlaces de los ácidos grasos insaturados produciendo diferentes especies peroxigenadas. La presencia de triacilgliceroles (TAG) alterados incrementa la polaridad de los aceites vegetales y producen cambios en sus propiedades físicas. Además, la peroxidación altera el nivel de agregación de los TAGs, favoreciendo la formación de dímeros u oligómeros que cambian de manera importante sus perfiles de fusión y cristalización. En este trabajo se estudió el efecto de la ozonización de cuatro aceites diferentes: girasol común, alto oleico, y dos aceites alto saturado, alto palmítico y esteárico, en fondo alto oleico. Así mismo, se estudiaron las especies de TAGs de estos aceites que fueron afectadas por el ataque oxidativo del ozono. Se investigaron por lo demás la formación de compuestos polares y TAGs agregados, además del efecto causado por ellos en sus propiedades físicas mediante estudios de calorimetría diferencial de barrido

    Hospital-acquired influenza infections detected by a surveillance system over six seasons, from 2010/2011 to 2015/2016

    In addition to outbreaks of nosocomial influenza, sporadic nosocomial influenza infections also occur but are generally not reported in the literature. This study aimed to determine the epidemiologic characteristics of cases of nosocomial influenza compared with the remaining severe cases of severe influenza in acute hospitals in Catalonia (Spain) which were identified by surveillance. An observational case-case epidemiological study was carried out in patients aged ≥18 years from Catalan 12 hospitals between 2010 and 2016. For each laboratory-confirmed influenza case (nosocomial or not) we collected demographic, virological and clinical characteristics. We defined patients with nosocomial influenza as those admitted to a hospital for a reason other than acute respiratory infection in whom ILI symptoms developed ≥48 h after admission and influenza virus infection was confirmed using RT-PCR. Mixed-effects regression was used to estimate the crude and adjusted OR. One thousand seven hundred twenty-two hospitalized patients with severe laboratory-confirmed influenza virus infection were included: 96 (5.6%) were classified as nosocomial influenza and more frequently had > 14 days of hospital stay (42.7% vs. 27.7%, P <.001) and higher mortality (18.8% vs. 12.6%, P <.02). The variables associated with nosocomial influenza cases in acute-care hospital settings were chronic renal disease (aOR 2.44 95% CI 1.44-4.15) and immunodeficiency (aOR 1.79 95% CI 1.04-3.06). Nosocomial infections are a recurring problem associated with high rates of chronic diseases and death. These findings underline the need for adherence to infection control guidelines

    Epidemiological trends of HIV/HCV coinfection in Spain, 2015-2019

    Objectives: We assessed the prevalence of anti-hepatitis C virus (HCV) antibodies and active HCV infection (HCV-RNA-positive) in people living with HIV (PLWH) in Spain in 2019 and compared the results with those of four similar studies performed during 2015-2018. Methods: The study was performed in 41 centres. Sample size was estimated for an accuracy of 1%. Patients were selected by random sampling with proportional allocation. Results: The reference population comprised 41 973 PLWH, and the sample size was 1325. HCV serostatus was known in 1316 PLWH (99.3%), of whom 376 (28.6%) were HCV antibody (Ab)-positive (78.7% were prior injection drug users); 29 were HCV-RNA-positive (2.2%). Of the 29 HCV-RNA-positive PLWH, infection was chronic in 24, it was acute/recent in one, and it was of unknown duration in four. Cirrhosis was present in 71 (5.4%) PLWH overall, three (10.3%) HCV-RNA-positive patients and 68 (23.4%) of those who cleared HCV after anti-HCV therapy (p = 0.04). The prevalence of anti-HCV antibodies decreased steadily from 37.7% in 2015 to 28.6% in 2019 (p < 0.001); the prevalence of active HCV infection decreased from 22.1% in 2015 to 2.2% in 2019 (p < 0.001). Uptake of anti-HCV treatment increased from 53.9% in 2015 to 95.0% in 2019 (p < 0.001). Conclusions: In Spain, the prevalence of active HCV infection among PLWH at the end of 2019 was 2.2%, i.e. 90.0% lower than in 2015. Increased exposure to DAAs was probably the main reason for this sharp reduction.     Human immunodeficiency virus/hepatits C virus coinfection in Spain: Elimination is feasible, but the burden of residual cirrhosis will be significant

    Background We assessed the prevalence of antibodies against hepatitis C virus (HCV-Abs) and active HCV infection in patients infected with human immunodeficiency virus (HIV) in Spain in 2016 and compared the results with those of similar studies performed in 2002, 2009, and 2015. Methods The study was performed in 43 centers during October-November 2016. The sample was estimated for an accuracy of 2% and selected by proportional allocation and simple random sampling. During 2016, criteria for therapy based on direct-acting antiviral agents (DAA) were at least significant liver fibrosis, severe extrahepatic manifestations of HCV, and high risk of HCV transmissibility. Results The reference population and the sample size were 38904 and 1588 patients, respectively. The prevalence of HCV-Abs in 2002, 2009, 2015, and 2016 was 60.8%, 50.2%, 37.7%, and 34.6%, respectively (P trend <.001, from 2002 to 2015). The prevalence of active HCV in 2002, 2009, 2015, and 2016 was 54.0%, 34.0%, 22.1%, and 11.7%, respectively (P trend <.001). The anti-HCV treatment uptake in 2002, 2009, 2015, and 2016 was 23.0%, 48.0%, 59.3%, and 74.7%, respectively (P trend <.001). In 2016, HCV-related cirrhosis was present in 7.6% of all HIV-infected individuals, 15.0% of patients with active HCV, and 31.5% of patients who cleared HCV after anti-HCV therapy. Conclusions Our findings suggest that with universal access to DAA-based therapy and continued efforts in prevention and screening, it will be possible to eliminate active HCV among HIV-infected individuals in Spain in the short term. However, the burden of HCV-related cirrhosis will continue to be significant among HIV-infected individuals
